1. Prepare the Cabbage
Begin by cutting two thick, even slices from the young cabbage, about 1-1.5 inches in thickness. Make sure the slices hold together well, keeping the core intact to prevent them from falling apart during cooking.
2. Make the Marinade
In a small bowl, melt the butter gently, either in the microwave or on the stove, until it becomes liquid and fragrant. Add the honey to the melted butter and mix until fully combined, creating a slightly sweet base for the marinade.
Stir in the soy sauce, followed by a squeeze of fresh lemon juice, and mix thoroughly to balance the flavors. Season with a pinch of salt to taste, then grate in the Parmesan cheese for a rich, savory finish. Whisk everything together until the mixture is smooth and well blended.
3. Marinate the cabbage
Generously coat each side of the cabbage slices with the prepared marinade, making sure the mixture covers the surface evenly. Use a brush or your hands to work the marinade into the cabbage layers for maximum flavor. Allow the slices to sit for a few minutes to absorb the flavors before moving to the next step.
4. Bake the cabbage
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper for easy cleanup. Place the marinated cabbage slices on the prepared sheet, ensuring they are evenly spaced. Bake in the preheated oven for 20-30 minutes, or until the edges are golden brown and slightly crispy. You may flip the slices halfway through cooking to ensure even caramelization.
5. Prepare the green sauce
While the cabbage bakes, prepare the green sauce. Combine your chosen fresh herbs (such as arugula, parsley, basil, or a mix) with cream cheese or feta in a blender or food processor. Add the toasted pine nuts for a nutty depth of flavor, a splash of lemon juice for brightness, and a pinch of salt to enhance the taste.
Blend everything together, gradually adding a little water as needed, until the sauce is smooth and creamy. Adjust the seasoning if necessary.
Ready to Serve
To assemble the dish, spread a generous layer of the green sauce on a serving plate as a flavorful base. Place the baked cabbage slices on top of the sauce, or drizzle the sauce over the cabbage for a more integrated presentation.
Serve warm, and enjoy this simple yet elegant combination of textures and flavors.
Every bite brings together rich, caramelized cabbage with a bright, herby sauce for a perfect balance of savory, sweet, and fresh. It’s a dish that feels both comforting and light, great as a standout side or the star of a plant-forward meal. Simple, elegant, and full of flavor, it’s the kind of recipe that lingers in memory long after the last bite.
