Top 3 recipe tips
1. Don’t Overfill the Tortillas
It’s tempting to add a lot of filling, but too much will make them hard to seal and flip. Keep the filling balanced so the tortillas stay closed and cook evenly.
2. Cook on Medium Heat
Use medium heat when frying. This allows the tortillas to become crispy and golden without burning, while the cheese inside melts perfectly.
3. Brush Garlic Butter While Hot
For the best flavor, brush the garlic butter right after cooking. The heat helps it soak into the tortillas, making them extra ароматные and delicious.

Ingredients in Crispy Chicken Tortillas with Cheese and Garlic Butter
What you will need

For the Chicken Filling:
Chicken (breasts + thighs): I used a mix of chicken breasts and chicken thighs for the best result. The breasts keep the filling light, while the thighs add extra juiciness and flavor. Cut everything into small cubes so it cooks evenly.
Olive oil: helps coat the chicken and enhances the flavor during cooking.
Chicken seasoning: use your favorite mix of spices. A simple blend of paprika, garlic powder, and herbs works perfectly.
Garlic powder: adds a deeper garlic flavor to the chicken without overpowering the dish.
Ghee (or butter): used for frying the chicken and adding a rich, slightly nutty flavor.
Tomato paste: gives the filling a rich, slightly tangy base and helps create that saucy texture.
Broth (or water): adds moisture and helps the tomato paste turn into a smooth sauce. Chicken broth will give more flavor, but water works just fine.
Mozzarella and cheddar cheese: mozzarella melts beautifully and gives that stretchy texture, while cheddar adds a stronger, richer flavor.
Fresh parsley and dill: bring freshness and balance to the richness of the filling.
Green onion (optional): adds a mild onion flavor and a bit of crunch.
Salt and black pepper: used to season everything and bring all the flavors together.
For the Tortillas:
Tortillas: use medium-sized soft tortillas. They should be flexible enough to fold without breaking.
Mozzarella slices: placed inside each tortilla to create an extra cheesy layer.
Ghee (for frying): helps achieve that crispy, golden exterior.
For the Garlic Butter:
Melted butter: forms the base of the garlic mixture and keeps it light but flavorful.
Garlic cloves: use fresh garlic for the best taste. Finely mince it so it spreads evenly.
Fresh parsley: adds color and freshness to the garlic butter.
Salt: just a pinch to enhance all the flavors.
Tips for Best Results
Use a mix of chicken for better flavor
Combining chicken breasts and thighs makes a big difference. The breasts keep it lighter, while the thighs add extra juiciness and richness.
Don’t skip sealing the tortillas
Lightly wetting the tortilla and pressing the edges with a fork helps keep everything inside while cooking. This way, the cheese doesn’t leak out.
Cook on medium heat for perfect crispiness
Too high heat will burn the tortillas before the cheese melts. Medium heat gives you that golden, crispy outside and a perfectly melted, creamy filling.
Use enough cheese, but not too much
Cheese is key for that gooey texture, but overfilling can make the tortillas hard to handle. Keep a good balance for the best result.
Brush garlic butter while hot
Right after cooking, brush the tortillas with garlic butter so it soaks in and adds that extra layer of flavor.
How to Make Crispy Chicken Tortillas
Start by cutting the chicken into small cubes. Since we’re using a mix of chicken breasts and thighs, you’ll get a really nice balance between light and juicy. Heat a bit of ghee in a pan and cook the chicken until it turns golden and slightly crispy on the edges.
Once the chicken is ready, stir in the tomato paste and let it cook for a minute to bring out its flavor.

Pour in a little broth (or water) and let everything simmer gently until it becomes slightly saucy. At this point, add the shredded mozzarella and cheddar, along with the chopped herbs, salt, and pepper. Mix everything well until the cheese melts and the filling turns creamy and rich.

Now it’s time to assemble. Take a tortilla and lightly moisten one side with a bit of water – this helps it seal later. Place a couple of slices of mozzarella on one half, add a generous spoon of the chicken filling, and finish with a little more cheese. Fold the tortilla over and press the edges with a fork to keep everything inside.

Heat a bit more ghee in a pan and cook the tortillas on both sides until they turn golden and crispy. You’ll notice the outside getting beautifully crunchy while the inside stays soft and cheesy.
While the tortillas are still hot, mix melted butter with minced garlic, chopped parsley, and a pinch of salt. Brush this over the tortillas right away so it soaks in and adds that final burst of flavor.

Ready to Serve
Serve the tortillas warm, right after brushing them with the garlic butter, while they’re still crispy on the outside and perfectly cheesy inside. Cut them in halves or smaller pieces if you want to share, or enjoy them whole for a more filling meal.
They go really well with a simple dip like sour cream or yogurt, or even a fresh salad on the side to balance the richness. If you like a bit of heat, you can also add a spicy sauce on top.
No matter how you serve them, they’re best enjoyed fresh, when the texture and flavor are at their peak 🤤

Variations & Substitutions
If you want to switch things up or use what you already have, this recipe is very flexible and easy to adapt.
Use only chicken breast or only thighs
If you don’t have both, you can use just chicken breast for a leaner option or only chicken thighs for a richer, juicier result.
Try different cheeses
Mozzarella and cheddar work perfectly, but you can also use gouda, edam, or any cheese that melts well. Each one will give a slightly different flavor.
Make it spicier
Add chili flakes, hot sauce, or a pinch of cayenne pepper to the filling if you like a bit of heat.
Swap ghee with butter or oil
If you don’t have ghee, regular butter or even olive oil works just fine for cooking the chicken and frying the tortillas.
Bake instead of frying
For a lighter version, place the filled tortillas on a baking tray, brush them with a little oil, and bake at 200°C until golden and crispy.
Add vegetables
You can mix in sautéed peppers, corn, or mushrooms with the chicken filling for extra texture and flavor.
Make it vegetarian
Replace the chicken with mushrooms or a mix of vegetables, and keep the same sauce and cheese for a delicious meat-free version.
Save it for your next busy weeknight, and enjoy a homemade meal that’s both simple and satisfying. 🍜✨
