Creamy Chicken and Mushroom Potato Casserole

Creamy Chicken and Mushroom Potato Casserole

If there’s one thing I can never say no to, it’s a good homemade casserole with lots of melted cheese. And this Creamy Chicken and Mushroom Potato Casserole has everything I want in a comforting family dinner.

It starts with a layer of buttery mashed potatoes, followed by tender chicken pieces and mushrooms cooked in a creamy sauce. Then comes my favorite part: a generous layer of shredded mozzarella that turns golden and bubbly in the oven.

I love how these ingredients work together. The potatoes are soft and creamy, the chicken has plenty of flavor from the seasonings, and the mushrooms make the sauce taste even better.

You don’t need anything fancy to make this recipe, either. Just a few everyday ingredients, a skillet, and a baking dish. Most of the cooking happens on the stove, and the oven takes care of that delicious cheesy topping.

It’s a great choice for a family dinner, especially on those evenings when you want something warm and filling without making several different dishes.

So, if all that sounds good to you, read on!

Top 3 recipe tips

Keep the mashed potatoes thick and creamy. You want them soft enough to spread in the baking dish, but not runny. Add the milk a little at a time, and remember that the creamy chicken and mushroom sauce will sit right on top.

Brown the chicken before making the sauce. Give those chicken pieces a chance to develop some color in the skillet. It makes a difference in flavor, and you can use the same pan afterward to cook the mushrooms and onions.

Let the casserole rest before serving. I know it’s tempting to dig in as soon as it comes out of the oven, especially with all that bubbling cheese. But giving it 5–10 minutes to cool slightly makes it much easier to scoop out a nice portion.

Why You Will Love This Recipe

I think we can all agree that potatoes and melted cheese are already a pretty good combination. Add some chicken and a creamy mushroom sauce, and you’ve got a dinner that’s hard to resist.

What I especially like about this chicken and mushroom potato casserole is that every layer brings something different.

The mashed potatoes are buttery and smooth. The chicken is seasoned with paprika, garlic powder, and onion powder, so it has plenty of flavor on its own. Then the mushrooms and onions bring everything together with a rich, creamy sauce.

And that golden mozzarella topping? Well, I don’t think it needs much explaining!

Another thing I appreciate is how practical this recipe is. While the potatoes are boiling, you can prepare the chicken and mushrooms. By the time the filling is ready, the potatoes are usually done too.

There’s also no need to make a separate side dish. You already have the chicken, potatoes, and mushrooms all in one baking dish.

It’s the sort of dinner I like making when everyone is hungry and I want to put something homemade on the table. Nothing complicated, just good food.

And if there’s some left over, that’s lunch sorted for the next day.

Ingredients in Chicken Stir Fry with Rice Noodles

What you will need

Ingredients for chicken and mushroom potato casserole, including chicken breasts, potatoes, mushrooms, cream, shredded cheese, oil, and seasonings.

Potatoes: Use Russet or Yukon Gold potatoes for the best mashed potatoes. Russets give you a fluffy texture, while Yukon Golds are naturally creamy and buttery. Both work great for this casserole.

Chicken breast: Boneless, skinless chicken breast is perfect here. Cut it into small, bite-sized pieces so it cooks quickly and mixes nicely with the mushroom sauce.

Mushrooms: I used fresh button mushrooms, but cremini mushrooms work just as well. Chop them into small pieces so you get a little mushroom in every bite.

Onion: A regular yellow onion is all you need. It adds a mild sweetness when cooked and brings extra flavor to the creamy filling.

Heavy cream: This is what makes the chicken and mushroom filling so creamy. Heavy cream works beautifully because it thickens slightly as it cooks and creates a rich, smooth sauce.

Butter: Adds a delicious buttery flavor to the mashed potatoes and helps make them soft and creamy.

Milk: Use whole milk for a richer mashed potato texture, although any regular milk will work. Add it gradually so the potatoes don’t become too runny.

Mozzarella cheese: I love using shredded mozzarella for this recipe. It melts beautifully in the oven and creates that golden, bubbly cheese topping.

Sweet paprika: Gives the chicken a lovely color and a mild, slightly sweet flavor without making it spicy.

Garlic powder: Adds a savory garlic flavor to the chicken without needing fresh garlic.

Onion powder: Even though we’re already using fresh onion, a little onion powder gives the chicken extra flavor while it cooks.

Vegetable oil: Use sunflower oil or another neutral cooking oil for frying the chicken, onions, and mushrooms.

Salt and black pepper: Keep these simple and season to taste. Remember to taste the mushroom sauce before assembling the casserole, since the cheese will also add some saltiness.

Tips for the Best Chicken and Potato Casserole

There are a few little things I pay attention to when making this recipe. Nothing difficult, but they really help with the final result.

Cook the potatoes until they’re completely tender.

If they’re still a little firm in the middle, you’ll have a harder time getting a smooth mash. Check them with a fork before draining.

Don’t add too much milk.

This isn’t the kind of mashed potato recipe where you want everything extra soft and loose. The potatoes form the bottom layer, so they need a little structure.

Give the chicken some room in the skillet.

If you add too much chicken at once, it releases moisture and starts steaming. Use a large skillet, or cook the chicken in batches if necessary.

Let the mushrooms cook before adding the cream.

Mushrooms release quite a bit of water. I always give them a few minutes to cook that moisture away before pouring in the cream.

Keep an eye on the sauce.

You want it thick enough to coat the chicken and mushrooms. If it looks too thin, let it simmer a little longer. Otherwise, the extra liquid can make the mashed potato layer too soft.

Don’t leave the casserole in the oven longer than necessary.

Everything is already cooked when it goes into the baking dish. You’re really just heating the layers together and melting the cheese.

Once the mozzarella is golden and the filling is hot all the way through, it’s ready.

How to Make Creamy Chicken and Mushroom Potato Casserole

1. Prepare the Potatoes

Three-step collage showing peeled potatoes in a bowl, potatoes cut into cubes, and diced potatoes boiling in a pot for mashed potato casserole.

Start by peeling the potatoes and rinsing them under cold water.

Cut them into medium-sized cubes, trying to keep the pieces roughly the same size. This helps them cook evenly.

Transfer the potatoes to a large pot, cover with cold water, and add a little salt.

Bring everything to a boil, then cook for about 15–20 minutes, or until the potatoes are soft enough to pierce easily with a fork.

While they’re cooking, you can get started on the chicken and mushrooms.

2. Chop the Chicken and Vegetables

Step-by-step collage showing raw chicken breast cut into cubes, chopped onions, diced mushrooms, and vegetable oil heating in a skillet.

Cut the chicken breast into small, bite-sized cubes.

Next, peel the onion and chop it finely.

Clean the mushrooms and cut them into small pieces as well. I prefer diced mushrooms instead of large slices for this casserole because they blend better with the chicken and cream.

Once everything is chopped, you’re ready to start cooking.

3. Cook the Chicken

Four-step collage showing chicken breast cubes cooking in a skillet, seasoned with paprika, garlic powder, onion powder, salt, and pepper until golden.

Heat a little vegetable oil in a large skillet over medium-high heat.

Add the chicken pieces and spread them out so they have enough room to brown.

After a couple of minutes, season with sweet paprika, garlic powder, onion powder, salt, and black pepper.

Give everything a good stir, making sure the chicken is evenly coated with the seasonings.

Continue cooking until the chicken develops a nice golden color and is cooked through, reaching 165°F (74°C) in the center.

Transfer the chicken to a plate and set it aside.

Don’t wash the skillet just yet! We’re going to use it for the mushrooms.

4. Cook the Onion and Mushrooms

Step-by-step collage showing chopped onions and mushrooms cooking in a skillet before heavy cream is added to make a creamy mushroom sauce.

Add a little more oil to the same skillet if needed.

Start with the chopped onion and cook for 2–3 minutes, stirring occasionally, until it begins to soften.

Now add the mushrooms.

At first, they might look like they’re taking up the whole skillet, but they’ll shrink quite a bit as they cook.

Keep stirring until most of the moisture has evaporated and the mushrooms start to brown.

This part is worth giving a few extra minutes. The browned mushrooms add a lot of flavor to the sauce.

5. Make the Creamy Chicken and Mushroom Sauce

Four-step collage showing cooked chicken mixed with creamy mushroom sauce, boiled potatoes being mashed, and butter added to the potatoes.

Once the mushrooms are ready, lower the heat slightly and pour in the heavy cream.

Stir everything together and let the sauce simmer gently for a few minutes.

Add the cooked chicken back into the skillet, along with any juices left on the plate.

Mix well so all the chicken pieces are covered in the creamy mushroom sauce.

Let it cook together for another 2–3 minutes.

The sauce should be creamy and slightly thickened, not watery. Taste it and add a little more salt or pepper if necessary.

Turn off the heat and set the filling aside while you finish the potatoes.

6. Make the Mashed Potatoes

By now, your potatoes should be tender.

Drain them well and return them to the pot.

Add the butter while the potatoes are still hot, then mash everything together.

Pour in a little milk and continue mashing until the potatoes are smooth.

Add more milk only if needed.

You want a creamy texture, but make sure the mashed potatoes are still thick enough to hold their shape.

Season with salt to taste.

7. Assemble the Casserole

Step-by-step collage showing mashed potatoes spread in a baking dish, topped with creamy chicken and mushrooms, then covered with shredded mozzarella.

Now we’re ready to put everything together.

Take a medium-sized baking dish and spread the mashed potatoes evenly across the bottom.

Use a spatula or the back of a spoon to smooth the surface.

Next, spoon the creamy chicken and mushroom mixture over the potatoes.

Make sure to spread it all the way to the edges, so every serving has plenty of chicken, mushrooms, and sauce.

At this point, it already looks pretty good. But we’re not done yet!

8. Add the Mozzarella

Sprinkle the shredded mozzarella evenly over the chicken and mushroom layer.

I like using enough cheese to cover the entire top, but you can adjust the amount depending on how cheesy you want it.

There’s no need to press the cheese down. Just spread it out and let the oven do the rest.

9. Bake Until Golden and Bubbly

White ceramic baking dish filled with mashed potatoes, creamy chicken and mushroom filling, and shredded mozzarella placed inside the oven.

Preheat your oven to 350°F (180°C) using the conventional setting.

Place the baking dish on the middle rack and bake for approximately 20–25 minutes.

Since the chicken, potatoes, and mushrooms are already cooked, the goal is to heat everything through and melt the mozzarella.

You’ll know it’s ready when the cheese is bubbling and has developed those beautiful golden-brown spots on top.

If your oven browns cheese quickly, start checking a little earlier.

10. Let It Rest and Serve

Remove the casserole from the oven and place it on a heat-safe surface.

Let it rest for about 5–10 minutes before serving.

This gives the creamy filling a chance to settle a little, making it easier to scoop out portions.

Serve warm and enjoy all those delicious layers!
