Ingredients
For the marinade
- 4 tbsp Hummus
- 3 tbsp Sour Cream
- Lemon zest
- 2 tbsp Lemon juice
- 2 tbsp Olive oil
- Pepper tot taste
For the meat
- Boneless chicken thighs
For the vegetables
- Cabbage
- Pickled cucumbers
- Tomatoes
- Onion (optional)
For the wrap
- Wrap sheets
- Tomato sauce
- French fries
Instructions
Step 1: Season the Chicken and Prepare the Sauce
- Start by taking the boneless chicken thighs and seasoning them on both sides. Gently massage the seasoning into the chicken with your hands to ensure even coverage.
- Next, prepare the sauce. In a bowl, combine hummus, sour cream, grated lemon zest, olive oil, and freshly squeezed lemon juice. Mix everything well until the sauce is smooth and creamy. Season the sauce with black pepper to taste.
Step 2: Marinate the Chicken
- In a deep rectangular baking dish, spread a layer of the prepared sauce evenly across the bottom. Place a few pieces of the seasoned boneless chicken thighs on top of the sauce. Add another layer of sauce over the chicken, then continue layering with the remaining chicken and sauce until all the chicken is placed in the dish.
- Make sure the final layer is a generous amount of sauce, fully covering the chicken. Cover the baking dish with plastic wrap and place it in the refrigerator for at least 2 hours to allow the chicken to marinate and absorb all the flavors.
Step 3: Cook the Chicken
- After the chicken was marinated for at least 2 hours, preheat your oven to 200°C. Take the baking dish out of the refrigerator and uncover it. Place the dish directly in the oven, baking the chicken until it is fully cooked through and golden on top, about 35-40 minutes.
Step 4: Cut the ingredients
- Begin by finely chopping the cabbage and placing it on a plate. Next, slice the pickled cucumbers into thin rounds and add on other plate. Then, cut the tomatoes in half and slice each half into thin pieces. Add the sliced tomatoes on the plate. Likewise, cut the meat into small pieces to make it easier to eat. If desired, you can also chop an onion into small pieces.
Step 5: Roll and Grill the Wraps
- Start by setting aside some of the sauce from the baked meat—we’ll use it later. On a wrap or flatbread, spread a layer of the sauce, then add some of the meat. Top with shredded cabbage and sliced tomatoes. Next, add the potatoes, followed by another layer of meat. Finally, drizzle 2–3 tablespoons of the reserved sauce over all the ingredients.
- Finally, roll up the wrap tightly, ensuring all the filling is enclosed. Preheat your grill or grill pan to medium heat. Place the rolled wrap on the grill and cook until it is golden brown and crispy, typically about 3-5 minutes on each side. This will enhance the flavor and texture, giving you a deliciously grilled wrap.
