1. Prepare the Dough:

Add the flour and salt to the mixture and stir until combined, then knead the dough for 5-10 minutes until smooth. Cover the dough and let it rest for 60 minutes until it doubles in size, if your home is cold, you can place the dough in the oven with the light on to help it rise.

2. Shape the Dough:
After the dough has risen, punch it down to release the air. Divide the dough into 3 equal portions, and roll each portion into a ball, covering them with a cloth while you work with each one. Start with the first dough ball and roll it into a circle about 1/4 cm thick.

3. Layer the Dough and Filling:
Place the first piece of dough on greaseproof paper, brush it with olive oil, and sprinkle with feta and mozzarella. Add the second layer of dough, brush with olive oil, and add the remaining feta and mozzarella, then top with the final piece of dough and gently roll it out, pressing the center slightly.

4. Shape the Snowflake:
Use a cookie cutter to mark the center of the dough, then cut the dough into 4 sections, from each of those sections, make 2 more cuts, giving you 8 sections in total. Twist 2 sections together, twisting them about 6-7 times, and then join the ends to form a snowflake shape. Once the shape is complete, cover it and let it rest for 30 minutes, while resting, preheat the oven to 180°C (350°F).

5. Bake the Snowflake:
After the resting time, brush the dough with an egg yolk mixture for a glossy finish, and sprinkle with Nigella seeds. Bake in the preheated oven for about 25 minutes or until golden and flakey. Allow the snowflake to cool for 10 minutes before serving.
