Zucchini – Sliced into 1/4-inch rounds with the skin left on.

Cornstarch – Instead of breadcrumbs, cornstarch is used for a crisp, light coating.

Seasoning – Salt and pepper, either measured or added to taste.

Flour – All-purpose flour helps the cornstarch adhere to the zucchini’s moist surface for that crispy texture.

Eggs – Three large eggs are used as the binder for the dredge.

Oil – A light, neutral-tasting oil is perfect for frying these crispy zucchini rounds.
