Crispy Zucchini Rings with Creamy Lemon Dip (Air Fryer or Oven)
Crispy Zucchini Rings with Creamy Lemon Dip
Zucchini season always seems to leave me with more zucchini than I know what to do with, so I’m constantly looking for new ways to use it. These crispy zucchini rings turned out to be one of those recipes that disappeared from the table much faster than I expected.
The outside becomes golden and crunchy thanks to a simple breadcrumb coating, while the zucchini stays tender in the middle. Instead of throwing away the centers, I turned them into a creamy lemon dip packed with herbs and flavor. It’s a simple extra step that makes the whole dish feel complete.
These zucchini rings are perfect as a snack, appetizer, or side dish, and they’re easy to make in either the air fryer or the oven. They’re crispy, flavorful, and a great way to turn a few everyday ingredients into something everyone will want to grab straight from the plate.
So, if all that sounds good to you, read on!
Top 3 recipe tips
1. Cut the zucchini into thick slices
Thin zucchini rings can become soft and lose their shape during cooking. Aim for slices about ½ inch (1.25 cm) thick so they stay sturdy and develop a crispy exterior while remaining tender inside.
2. Don’t skip the cornstarch
Cornstarch helps the coating stick and creates a crunchier texture. It also absorbs some of the zucchini’s natural moisture, giving you crispier zucchini rings after baking or air frying.
3. Cook in a single layer
For the best golden-brown finish, arrange the zucchini rings in a single layer without overlapping. Overcrowding traps steam and can make the coating less crispy. If needed, cook in batches for the best results.

Ingredients in Crispy Zucchini Rings with Creamy Lemon Dip
What you will need

Zucchini
Use medium-sized zucchini that are firm and fresh. Larger zucchini tend to have more seeds and can become watery when cooked. Try to choose zucchini of a similar size so the rings cook evenly.
Olive Oil
A small amount of olive oil helps the coating stick to the zucchini and encourages a golden, crispy finish. You can also use avocado oil if preferred.
Cornstarch
Cornstarch is the secret to extra crispy zucchini rings. It helps absorb moisture from the zucchini and creates a lighter, crunchier coating.
Breadcrumbs
Regular or panko breadcrumbs both work well. Panko breadcrumbs will give the zucchini rings an even crispier texture, while traditional breadcrumbs create a more uniform coating.
Parmesan
The parmesan adds a savory, cheesy flavor to the coating. Use either vegan parmesan or regular parmesan depending on your preference.
Seasonings
A blend of garlic powder, onion powder, paprika, oregano, salt, and black pepper gives the zucchini rings plenty of flavor without overpowering the zucchini itself. Feel free to adjust the amounts to suit your taste.
Zucchini Centers
Don’t throw away the zucchini centers after cutting the rings. They become the base of the creamy dipping sauce, adding flavor while reducing food waste.
Lemon Juice
Fresh lemon juice brightens the dip and balances the richness of the yogurt and tahini. Freshly squeezed juice is recommended for the best flavor. (I forgot to add this to the picture.🤭)
Yogurt
Plain Greek yogurt creates a rich and creamy dip. For a dairy-free version, use your favorite unsweetened vegan yogurt.
Tahini
Tahini adds a subtle nutty flavor and makes the dip extra creamy. If you don’t have tahini, you can leave it out, although the dip will be slightly less rich. (I don’t have any at the moment, but if you do, you can add it.)
Tips for the Best Crispy Zucchini Rings
Pat the zucchini dry
Zucchini naturally contains a lot of moisture. Pat the slices dry with paper towels before coating them to help the breadcrumbs stick better and create a crispier finish.
Use panko breadcrumbs for extra crunch
While regular breadcrumbs work well, panko breadcrumbs create a lighter and crunchier coating that stays crisp longer.
Don’t overcrowd the basket or baking tray
Leave a little space between each zucchini ring. Proper air circulation helps them cook evenly and become golden brown instead of steaming.
Flip halfway through cooking
Turning the zucchini rings halfway through ensures both sides become evenly crispy and golden.
Serve immediately
These zucchini rings are at their crispiest right after cooking. Serve them warm with the creamy lemon dip for the best texture and flavor.
Season while hot
For an extra burst of flavor, sprinkle a little additional parmesan and your favorite seasonings over the zucchini rings as soon as they come out of the oven or air fryer.
Make the dip ahead of time
The creamy zucchini dip can be prepared a few hours in advance and stored in the refrigerator. The flavors become even better as they sit together.
How to Make Crispy Zucchini Rings

Step 1: Prepare the zucchini
Preheat your air fryer or oven to 400°F (200°C). Wash the zucchini and slice them into thick rounds, about ½ inch thick. Using a small round cutter, apple corer, or bottle cap, carefully remove the center of each slice to create zucchini rings. Set the centers aside for the dip.
Step 2: Season and coat the rings
Place the zucchini rings in a large mixing bowl. Drizzle with olive oil and toss until evenly coated. Add the cornstarch, breadcrumbs, parmesan, garlic powder, onion powder, paprika, oregano, salt, and black pepper. Mix well until all of the zucchini rings are fully coated with the breadcrumb mixture.
Step 3: Arrange for cooking
Place the coated zucchini rings in a single layer on a parchment-lined baking tray or in the basket of your air fryer. Make sure they are not overlapping so they can become crispy as they cook.
Step 4: Cook until golden
Air fry or bake the zucchini rings for 20–25 minutes, flipping them halfway through cooking. They are ready when the coating is golden brown and crispy and the zucchini is tender inside.

Step 5: Make the creamy zucchini dip
While the zucchini rings are cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the reserved zucchini centers and a pinch of salt. Cook for 3–5 minutes, stirring occasionally, until softened.
Transfer the cooked zucchini centers to a blender or food processor. Add the lemon juice, yogurt, tahini, garlic powder, onion powder, paprika, oregano, salt, and black pepper. Blend until smooth and creamy. Taste and adjust the seasoning if needed.
Step 6: Serve and enjoy
Transfer the crispy zucchini rings to a serving plate and serve immediately with the creamy lemon zucchini dip. For even more flavor, sprinkle a little extra parmesan and a pinch of your favorite seasonings over the hot zucchini rings just before serving.
Ready to Serve
Once the zucchini rings are golden and crispy, transfer them to a serving platter and place the creamy lemon zucchini dip in a small bowl alongside them. The contrast between the crunchy coating and the smooth, tangy dip makes every bite irresistible.
These crispy zucchini rings are delicious as an appetizer, afternoon snack, or side dish for grilled meats, sandwiches, burgers, or wraps. They’re also a great addition to party platters and summer gatherings.

For the best texture, serve them immediately while they’re still warm and crispy. If desired, finish with a sprinkle of extra parmesan, fresh herbs, or a squeeze of lemon juice just before serving.
Variations & Substitutions
One of the best things about this recipe is how easy it is to customize based on what you have in your kitchen.
Use Panko Breadcrumbs
For extra crunchy zucchini rings, replace regular breadcrumbs with panko breadcrumbs. They create a lighter, crispier coating that’s perfect for air frying.
Try Different Cheeses
Parmesan adds a delicious savory flavor, but you can also use Pecorino Romano, Asiago, or your favorite dairy-free parmesan alternative.
Make It Gluten-Free
Swap the breadcrumbs for your favorite gluten-free breadcrumbs to make this recipe gluten-free.
Change the Seasonings
Feel free to experiment with different spice blends. Italian seasoning, Cajun seasoning, smoked paprika, or even a pinch of chili flakes can add a new flavor twist.
Skip the Tahini
If you don’t have tahini on hand, simply leave it out. The dip will still be creamy and flavorful thanks to the yogurt and zucchini.
Use Greek Yogurt
Greek yogurt creates a thicker, richer dip, while regular plain yogurt gives a lighter texture. Both work well in this recipe.
Add Fresh Herbs
Fresh parsley, dill, basil, or chives can be mixed into the dip for extra freshness and flavor.
Make Them Spicy
Add cayenne pepper, red pepper flakes, or a dash of hot sauce to the coating or dip if you enjoy a little heat.
Oven or Air Fryer
This recipe works beautifully in both the oven and air fryer. The air fryer usually produces slightly crispier zucchini rings, while the oven is ideal when making a larger batch.
Save it for your next busy weeknight, and enjoy a homemade meal that’s both simple and satisfying. 🍜✨
