Ingredients
  

  • 3 clementines
  • 1 tablespoon honey
  • 1 tablespoon sherry vinegar
  • 1 duck breast magret de canard
  • A few sprigs of fresh rosemary

Instructions
 

Preparation: Sauce

  • Peel one clementine and separate its segments. Squeeze the other two clementines to extract as much juice as possible.
  • In a small saucepan, bring the honey, Sherry vinegar, and clementine juice to a boil. Cook until the mixture becomes syrupy.

Preparation: Duck Breast

  • Using a knife, score the fat layer of the duck breast without cutting into the meat.
  • Place the duck breast fat-side down in a skillet and cook for 7 minutes.

Preparation: Duck Breast 2

  • Flip the duck breast and cook for another 7 minutes.
  • Remove excess fat from the skillet and pour in the syrupy mixture.

Serving

  • Baste the duck breast with the sauce. Serve immediately with clementine segments, a sprig of rosemary, and a dash of pepper(optional).
