How to make Tender Braised Pork Chops in Dark Beer
Time needed: 25 minutes
With all the ingredients prepared, it’s time to bring this dish together. The steps below are simple and straightforward, focusing on building layers of flavor while allowing the pork chops to cook slowly and become perfectly tender. Follow each step in order, and you’ll be rewarded with juicy pork and a rich, glossy sauce full of depth and aroma.
- Season the pork chops
Pat the pork chops dry with paper towels. Season both sides with salt, black pepper, and paprika, then drizzle with olive oil and rub the seasoning evenly over the meat.
- Sear the pork chops
Heat a large pan over medium-high heat. Add butter and allow it to melt. Sear the pork chops for a few minutes on each side until a deep golden crust forms. Remove the pork chops from the pan and set aside.

- Prepare the aromatics & Build the aromatic base
Finely chop the red onion and mince the garlic. Zest the orange and squeeze the juice. Set everything aside so it’s ready to use. In the same pan, add the chopped red onion and cook until softened. Add the garlic, fresh thyme, and orange zest, stirring briefly until fragrant. Squeeze in the fresh orange juice and let it cook for a moment.

- Create the braising sauce & Braise the pork chops
Pour in the dark beer, then add the Dijon mustard and soy sauce. Stir well and let the mixture simmer for 1–2 minutes to allow the alcohol to cook off and the flavors to combine. Return the pork chops to the pan, making sure they are partially submerged in the sauce. Reduce the heat to low, cover, and let them braise gently until tender and juicy.

- Slow-cook the pork chops
Cover them with a lid and let them cook on low heat for 1 hour and 30 minutes, turning them occasionally so they cook evenly and stay juicy.

- Reduce and glaze
After 1.5 hours, remove the lid and let the sauce simmer uncovered until it reduces and thickens into a glossy glaze that coats the pork chops.
Ready to Serve
Once the pork chops are perfectly tender, spoon the rich, glossy sauce generously over each piece. Make sure every chop is well coated, as the sauce carries all the deep, aromatic flavors developed during the slow cooking process. Serve immediately while hot, allowing the pork to stay juicy and the sauce smooth and velvety. This dish pairs beautifully with simple sides and is best enjoyed fresh for maximum flavor and texture.

This braised pork chops in dark beer recipe is proof that simple ingredients and slow cooking can create something truly special. The pork turns incredibly tender, while the rich, glossy sauce brings all the flavors together in a comforting, satisfying way. It’s the kind of dish that feels perfect for a cozy dinner, yet impressive enough to serve to guests.
