Ingredients
  

For the pork chops

  • 8 boneless pork chops
  • Salt to taste
  • Black pepper to taste
  • 2 teaspoons paprika
  • 2 tablespoons olive oil

For the sauce

  • 60 g butter divided
  • 1 medium red onion finely chopped
  • 6 –8 garlic cloves minced
  • 4 –5 sprigs fresh thyme
  • Zest of 1 orange
  • Juice of 1 orange
  • 1 liter dark beer
  • 2 tablespoons Dijon mustard
  • 4 tablespoons soy sauce
  • 1 liter chicken stock
  • Lemon juice to taste

Instructions
 

  • Finely chop the red onion and mince the garlic. Zest the orange and squeeze the juice. Set aside.
  • Pat the pork chops dry. Season both sides with salt, black pepper, and paprika. Drizzle with olive oil and rub evenly.
  • Heat a large pan over medium-high heat. Add half of the butter and sear the pork chops on both sides until golden. Remove from the pan and set aside.
  • In the same pan, add the remaining butter. Add the chopped onion and cook until softened. Stir in the garlic, thyme, and orange zest and cook briefly until fragrant.
  • Pour in the dark beer, then add the Dijon mustard and soy sauce. Stir well and simmer for 1–2 minutes to cook off the alcohol.
  • Return the pork chops to the pan. Cover, reduce the heat to low, and cook for 1 hour and 30 minutes, turning the pork chops occasionally.
  • Remove the lid and continue cooking until the sauce reduces and thickens into a glossy glaze.
  • Transfer the pork chops to a plate. Add the chicken stock to the pan and stir, scraping up any browned bits. Simmer briefly, then adjust with lemon juice to taste.
  • Spoon the sauce over the pork chops and serve immediately.
