Ingredients
  

  • 3 tomatoes halved
  • 1 onion sliced
  • 2 garlic cloves minced
  • 1 tsp tomato paste
  • 300 g shrimps peeled and deveined
  • 250 g pasta tagliatelle, linguine, or spaghetti
  • 2 ladles pasta water
  • 2 tbsp olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 tsp paprika powder
  • ½ tsp chili flakes
  • 1 tsp dried basil
  • Fresh basil leaves for garnish
  • Parmesan cheese grated

Instructions
 

  • Cut the tomatoes in half and slice the onion.
  • Heat olive oil in a pan, place tomatoes cut side down with onion slices, and sauté until soft.
  • Meanwhile, cook pasta according to package instructions. Reserve 2 ladles of pasta water.
  • Peel tomato skins, add tomato paste and salt, then sauté briefly.
  • Transfer tomatoes and onion to a blender, add a little hot water, and blend into a smooth sauce. Adjust seasoning.
  • In another pan, heat olive oil, add shrimps, garlic, and spices. Cook until shrimps turn golden.
  • Pour the blended tomato sauce over the shrimps and stir well.
  • Add cooked pasta and fresh basil leaves, tossing everything together.
  • Serve warm with grated Parmesan on top.
