Ingredients
  

  • 3 pcs Zucchinis
  • 500 g Chicken breasts
  • A can of corn
  • A can of red beans
  • 200 g Cheese
  • 3 tbsp Greek yogurt
  • Salt & spices to taste
  • A bunch of parsley

Instructions
 

Prepare and Roast the Zucchini

  • Cut the zucchinis in half lengthwise. Lightly sprinkle each half with a pinch of salt to enhance the flavor. Preheat the oven to 200°C. Place the zucchini halves on a baking tray, put side up, and roast them in the oven until they are tender and slightly golden, about 20-25 minutes.

Cook and Slice the Chicken

  • Generously season the chicken breast with spices like salt, pepper, paprika, and garlic powder. Heat a skillet over medium heat and cook the chicken until it's halfway done and lightly golden on the outside, about 4-5 minutes per side.
  • Once cooked, remove from the pan, let it cool slightly, and cut into small bite-sized pieces. Set aside for later.

Prepare the Filling

  • In a large bowl, add the sliced chicken breast, beans, corn, chopped parsley, and Greek yogurt. Season with salt and pepper to taste. Mix all the ingredients together until well combined, ensuring an even coating of yogurt throughout the mixture.

Prepare the Zucchini Boats

  • Once the zucchinis are roasted and tender, remove them from the oven and let them cool slightly. Using a teaspoon, carefully scoop out the inner flesh of each zucchini half, creating hollow "boats" that will hold the filling. Be sure to leave enough zucchini flesh around the edges to keep the structure intact.

Fill the Zucchini Boats

  • Spoon the prepared chicken and vegetable filling into each zucchini boat, ensuring that they are generously filled. Use a spoon to press the filling down lightly, making sure it is compact.
  • Once all the zucchini boats are filled, sprinkle a generous amount of grated cheese evenly over the top of each one. This will not only add a delicious cheesy flavor but also create a beautiful golden crust as they bake.

Bake and Garnish the Zucchini Boats

  • Place the filled zucchini boats in the oven and bake until the zucchini is tender and the cheese is melted and golden brown, about 15-20 minutes. Once they are done baking, remove the zucchini boats from the oven and let them cool slightly. Before serving, sprinkle chopped parsley on top for a fresh touch and added flavor.
