Ingredients
  

For the Meringue:

  • 200 g egg whites
  • 300 g fine sugar
  • 2 tablespoons lemon juice or a pinch of citric acid
  • 2 tablespoons cornstarch
  • Vanilla sugar to taste
  • Almond flakes to taste

For the Cream & Decoration:

  • 300 g cream cheese
  • 200 ml heavy cream 33% fat
  • 60 g powdered sugar
  • 200 g fresh strawberries
  • 2 tbsp Almond flakes for garnish

Instructions
 

Step 1: Make the Meringue Base

  • Whip the egg whites with sugar until stiff peaks form – thick, glossy, and stable. Add lemon juice and cornstarch, then spread the mixture into a rectangular shape on a baking sheet lined with parchment paper. Sprinkle with almond flakes and bake at 150°C (300°F) for 30–35 minutes until lightly golden and crisp. Let it cool completely.

Step 2: Fill and Roll

  • Flip the cooled meringue onto a clean sheet of parchment and carefully peel off the baking paper. Whip cream cheese, whipping cream, and powdered sugar until thick. Spread the cream evenly over the meringue, then add a layer of fresh chopped strawberries. Gently roll it into a roulade using the parchment to guide you.

Step 3: Decorate

  • Use the remaining cream to pipe decorative swirls on top of the roulade. Finish by placing sliced fresh strawberries neatly along the roll. For a beautiful finish, sprinkle extra toasted almond flakes if desired.

Step 4: Chill & Serve

  • Refrigerate the roulade for at least 2 hours before slicing. This allows the cream to set and the flavors to meld beautifully. Serve chilled, and enjoy every bite of this light, fruity, and elegant summer dessert!
