Ingredients

  • 2 whole pork rib racks
  • 10 tablespoons soy sauce
  • 150 g tomato paste
  • 100 g brown sugar
  • 2 tablespoons honey
  • 10 g sesame seeds
  • 2 tablespoons olive oil
  • 15 g garlic powder
  • 30 g paprika
  • 1 tablespoon salt
  • 1 tablespoon black pepper

Instructions

  • In a medium bowl, combine the brown sugar, garlic powder, paprika, salt, and black pepper. Mix well until the spices are evenly combined.
  • Remove the thin membrane from the back of the pork ribs if needed. Pat the ribs dry with paper towels, then brush both sides lightly with olive oil.
  • Rub the seasoning mixture generously all over the ribs, making sure they are evenly coated on all sides.
  • Line a large baking tray with aluminum foil and place the ribs on top. Wrap the ribs tightly in the foil to keep them juicy while baking.
  • Bake in a preheated oven at 200°C (400°F) for about 2 hours, or until the ribs become tender.
  • While the ribs are baking, prepare the glaze. In a bowl, mix together the soy sauce, tomato paste, and honey until smooth.
  • Carefully open the foil and brush the ribs generously with the honey soy glaze on all sides.
  • Return the ribs to the oven uncovered and bake for another 5–7 minutes using the upper grill setting, until the glaze becomes sticky and caramelized.
  • Let the ribs rest for a few minutes before slicing. Sprinkle with sesame seeds and serve hot.
