Ingredients
  

  • 10 large mushrooms stems removed and finely chopped
  • 10 shrimp peeled and deveined
  • 2 cups fresh spinach chopped
  • 3 garlic cloves thinly sliced
  • 20 g butter about 1 ½ tablespoons
  • 1 teaspoon fresh thyme or ½ teaspoon dried
  • 200 ml cooking cream about ¾ cup
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon breadcrumbs
  • 1 tablespoon teriyaki sauce
  • 40 g parmesan cheese grated (about ⅓ cup)

Instructions
 

Prepare the Mushrooms

  • Clean the mushrooms thoroughly, removing the stems and setting them aside for later use in the filling. Carefully clean the mushroom caps, making sure they are ready to be stuffed.
  • Finely chop the mushroom stems to incorporate them into the filling.

Chop the Spinach

  • Finely chop the spinach to ensure it wilts evenly in the filling.

Slice the Garlic

  • Thinly slice the garlic cloves to enhance the flavor in the filling.

Cook the Filling

  • In a skillet, melt the butter over medium heat. Add the sliced garlic and sauté until fragrant, about 1-2 minutes. Then, add the thyme and stir for another 1-2 minutes. Next, add the chopped mushroom stems and cook for 2 minutes. Stir in the chopped spinach and cook for an additional 1-2 minutes until it wilts. Pour in the cooking cream, stir well, and let the mixture simmer for a few minutes. Season with salt and pepper to taste. Finally, add the breadcrumbs and continue stirring for a few more minutes until the mixture thickens.

Stuff the Mushrooms

  • Carefully spoon the prepared filling into each mushroom cap, then top each with a shrimp. Arrange the stuffed mushrooms in a baking tray and brush with teriyaki sauce.

Bake and Serve

  • Place the tray in the oven and bake at 180-200°C (350-400°F) for about 20 minutes. Once the mushrooms are tender and the filling is golden, remove from the oven. For an extra boost of flavor, sprinkle Parmesan cheese on top before serving. Enjoy!
