Ingredients
  

  • 4 whole salmon fillets about 150–180 g each
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 red bell pepper cut into chunks
  • 1 cup mushrooms sliced
  • 1 small red onion sliced
  • 3 - 4 tablespoons olive oil
  • 1 garlic clove finely chopped
  • 1 teaspoon paprika
  • 1 teaspoon dried herbs oregano, thyme, or Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • 1 lemon sliced
  • 2 large sheets parchment paper

Instructions
 

Preheat the oven

  • Preheat the oven to 190°C (375°F) and prepare a baking tray.

Prepare the marinade

  • In a small bowl, mix the chopped garlic, olive oil, paprika, dried herbs, salt, and black pepper.

Prepare the vegetables

  • Cut the broccoli, cauliflower, bell pepper, mushrooms, and red onion into medium pieces.

Prepare the parchment packets

  • Place the vegetables in the center of each sheet of parchment paper and drizzle lightly with olive oil. Season with salt and pepper.

Add the salmon

  • Place two salmon fillets on top of the vegetables in each packet. Brush the salmon with the prepared garlic marinade and place lemon slices on top.

Seal the packets

  • Fold the parchment paper over the salmon and vegetables and seal the edges tightly to form packets.

Bake

  • Place the packets on the baking tray and bake for about 30 minutes, until the salmon is tender and flakes easily with a fork.

Serve

  • Carefully open the packets and serve the salmon and vegetables warm, directly from the parchment or on plates.
