Ingredients
  

  • 500 g radishes – sliced into rounds matchsticks, or half-moons
  • 2 –3 tablespoons soy sauce – adjust to taste
  • 1 tablespoon apple cider vinegar – for tangy flavor
  • 1 tablespoon olive oil – helps coat the radishes evenly
  • 2 garlic cloves – minced or finely chopped
  • Fresh dill or green onion – finely chopped choose your favorite or use both
  • Sesame seeds optional – for extra texture and nutty flavor
  • Red paprika optional – for mild heat and color

Instructions
 

Wash and slice the radishes

  • Start by washing 500 g of fresh radishes thoroughly. Slice them into thin rounds, matchsticks, or half-moons, whatever is easiest for you. The thinner the slices, the faster they’ll absorb the marinade.

Chop the herbs

  • Finely chop a few sprigs of fresh dill or green onion, depending on your preference. These add a fresh, herby touch to your homemade pickled radish.

Prepare the marinade

  • In a medium bowl, combine 2–3 tablespoons of soy sauce, 1 tablespoon of apple cider vinegar, 1 tablespoon of olive oil, and 2 minced garlic cloves. Stir well to blend all the flavors.

Mix everything together

  • Add the sliced radish and chopped herbs to the marinade. Toss everything gently until the radish is evenly coated.

Optional flavor boost

  • If desired, sprinkle in some sesame seeds and a pinch of red paprika for extra crunch and color. This step adds a nice twist to your easy pickled radish.

Marinate and chill

  • Cover the bowl or transfer everything to a jar or container with a lid. Let it marinate in the fridge for at least 30 minutes. The longer it sits, the more flavorful your quick pickled radish will be.
