Ingredients
  

  • 2 whole dorada fish
  • 0.33 L dark beer
  • 5 –7 small onions
  • 8 –10 cherry tomatoes
  • 10 –15 white olives
  • 50 ml olive oil
  • Fresh rosemary sprigs
  • Salt and pepper to taste
  • 1 lemon halved

Instructions
 

Prep the Dorada

  • Lightly score the skin of each fish with a sharp knife.
  • Drizzle olive oil over the fish and rub it in evenly.
  • Season generously with salt and pepper, making sure to rub into the cuts for deeper flavor.

Assemble the Dish

  • Place the seasoned fish in a baking dish lined with parchment paper (optional).
  • Add the cherry tomatoes, small onions, and white olives around the fish.
  • Squeeze fresh lemon juice over the fish, then add the lemon halves to the dish.
  • Top with fresh rosemary sprigs.

Add the Beer & Bake

  • Pour the dark beer over the fish and vegetables.
  • Bake in a preheated oven at 200°C (390°F).
  • Baste the fish with the pan juices 2–3 times during baking to keep it moist and flavorful.

Serve

  • Remove from the oven once the fish is golden and cooked through.
  • Serve warm with the roasted vegetables and fragrant beer broth.
