Ingredients
  

  • 1 chicken breast boneless, skinless
  • 4 large flour tortillas
  • 4 medium eggs
  • 4 slices cheese
  • 1 ripe avocado
  • 1 medium tomato
  • 4 –5 lettuce leaves
  • 2 tablespoons cream cheese or Greek yogurt
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste
  • Optional: sauce of choice

Instructions
 

  • Slice the chicken breast into strips, season with salt and pepper, and cook in a pan with olive oil or butter until golden. Cut into smaller pieces.
  • Crack the eggs into a bowl, whisk with salt, and pour a thin layer into a heated non-stick pan. Place a tortilla on top, cook until set, then flip and cook until golden. Repeat with remaining eggs and tortillas.
  • Place the tortilla on a board and cut a slit from the center to the edge. Spread cream cheese on the first section, add lettuce on the second, tomato and cheese on the third, and chicken with sauce on the fourth.
  • Fold each section over the next to form a layered wrap. Repeat with the remaining tortillas. Serve warm.
