Ingredients
  

  • A pumpkin
  • 150 g Sugar
  • Cinnamon and nutmeg
  • 1 Egg
  • 20 ml Oil

For the dough:

  • 500 g Flour
  • 250-300 ml of lukewarm water
  • 4 g yeast or 7g dry yeast
  • 10 g of sugar
  • 10 g of salt
  • 10 ml Oil

Instructions
 

Prepare the dough

  • In a large bowl, add the flour, salt, sugar, and yeast. Gradually add the lukewarm water and knead gently until the dough starts to come together. After a few minutes of kneading, add the oil and continue kneading until the dough becomes smooth and elastic.
  • Cover the bowl with a clean towel and let the dough rise in a warm place for about an hour, or until it doubles in size.

Prepare the pumpkin

  • Peel the pumpkin, remove the seeds, and cut it into small, thin pieces.

Rolling out the dough

  • Once the dough has risen, divide it into two equal parts. Roll out each piece into a thin sheet approximately 30 cm wide and 70 cm long. Brush each sheet of dough with a little oil.

Filling and rolling

  • Place the pumpkin pieces on about 65% of the dough sheet, then sprinkle with sugar, cinnamon, and nutmeg on top.
  • Roll the sheet starting from the side with the pumpkin. Place the rolls on a baking tray lined with parchment paper and brush them with beaten egg. (Optional) Sprinkle the rolls with poppy seeds, chia seeds, sesame seeds, or other seeds as desired.

Cooking

  • Preheat the oven to 200°C (392°F) and bake the rolls for 45 minutes or until they are golden brown and crispy.
  • Let the rolls cool slightly before slicing. Serve warm or cold.
