Ingredients
  

For pancakes:

  • 4 eggs
  • 900 ml milk
  • 160 g sugar
  • 340 g flour
  • 60 g cocoa
  • 60 ml oil

For cream:

  • 1 kg mascarpone
  • 300 g whipping cream
  • 260 g sugar

For glaze:

  • 20 g dark chocolate
  • 15 g butter
  • 25 g whipping cream

Instructions
 

Preparing the Pancake Batter

  • In a small bowl, mix the flour with the cocoa powder.
  • In a larger bowl, crack the eggs, add the sugar, and mix well. Gradually add the flour and cocoa mixture to the eggs and sugar, stirring continuously.
  • Slowly pour in the milk, mixing well after each addition, until all the flour and cocoa mixture is incorporated.

Cooking the Pancakes

  • Heat a pan over medium heat and add a little oil. Once the oil is hot, pour the batter to make pancakes.
  • Cook the pancakes on both sides, as you would with regular pancakes.

Preparing the Cream Filling

  • In a bowl, blend the mascarpone and whipping cream using a mixer. Add the powdered sugar and mix well until you get a smooth, creamy texture.

Assembling the Cake

  • Layer the pancakes one by one, spreading the prepared cream on each layer. Continue alternating layers of pancakes and cream until you’ve used up all the pancakes.

Preparing and Applying the Glaze

  • In a bowl, combine the whipping cream and dark chocolate. Melt the chocolate in the microwave, then add the butter and stir well until you have a smooth glaze.
  • Pour the glaze over the top of the cake, spreading it evenly to cover the entire surface.

Decorating

  • Finally, sprinkle almonds around the edges for an elegant finish.
