  • Parmesan Cheese: A sprinkle of freshly grated Parmesan on top adds the perfect finishing touch.
  • Grated Lemon Peel: Freshly grated lemon peel adds a concentrated burst of citrus aroma and flavor.

Instructions
 

Preparing the Chicken Breast:

  • Make shallow cuts on the chicken breast and season it well.
  • Add the grated lemon zest and rub it evenly over the chicken.
  • Heat a pan with a little oil and add the chicken breast to fry.
  • Cook it on both sides until it becomes golden and crispy.

Preparing the Sauce:

  • Finely chop the spinach, sun-dried tomatoes, and herbs.
  • Squeeze the juice from one lemon.
  • After removing the chicken, add coconut milk to the same pan and mix well until it becomes liquid.
  • Add the spinach and stir well, then add the feta cheese and crumble it.
  • If the sauce is too thick, you can add more coconut milk.
  • Add the sun-dried tomatoes and stir again.
  • Add the lemon juice and taste the sauce. Add salt to taste, then taste again to make sure there's enough salt.

Finalizing the Dish:

  • Place the chicken breast in the sauce and pour the sauce over it.
  • Add the peas, sprinkle parmesan on top, and let it cook for another 5 minutes.
  • Finally, you can sprinkle a bit more parmesan and fresh herbs.
