Ingredients

  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 14 ounces boneless skinless chicken breast, diced
  • 5 ounces chorizo sausage diced
  • 1⅓ cups uncooked white rice
  • 1¾ to 2 cups chicken broth
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • ¾ cup reduced-fat shredded cheese
  • Fresh parsley chopped (optional, for garnish)
  • Steamed broccoli for serving

Instructions

Step 1: Season the Chicken

  • Heat a large pan over medium heat and add the chicken. Sear for a few minutes until it starts to brown.

Step 2: Add Veg, Chorizo & Tomato Purée

  • Add in the diced onion, garlic, and chorizo. Cook for 2–3 minutes, allowing the chorizo to release its oils and the onions to soften. Stir in the tomato purée and cook for another minute to deepen the flavor.

Step 3: Add Rice & Stock:

  • Pour in the uncooked rice and stir to coat everything evenly. Add the stock and bring to a boil.

Step 4: Simmer

  • Once boiling, reduce the heat to low, cover the pan, and let it simmer for 15–20 minutes, stirring occasionally, until the rice is tender and the liquid is absorbed.

Ready to Serve

  • Stir through chopped parsley if using. Sprinkle the grated cheese over the top, cover again, and let it sit for a few minutes until the cheese melts. For extra flavor, sprinkle a little extra chorizo on top.
