Ingredients
  

  • Soba Noodles
  • Beef – thinly sliced
  • Bell peppers – sliced use red, yellow, or green for color
  • Mushrooms – sliced shiitake or button mushrooms work well
  • Carrots – julienned
  • Garlic – minced
  • Lemon zest – freshly grated
  • Soy sauce – adjust to taste

Instructions
 

Prepare the Vegetables and Meat

  • Cut the broccoli into florets. Slice the bell peppers julienne (thin strips). Do the same with the carrots, slicing them julienne.
  • Slice the mushrooms. Cut the meat into equal pieces, also julienne.

Cook the Broccoli

  • Heat a pan with a bit of butter, then add the broccoli. Pour a little water over the broccoli and cover the pan with a lid. Let it steam for a few minutes.
  • Remove the lid, add seasonings, and sauté the broccoli until it develops a light crust. Remove the broccoli from the pan and set it aside.

Cook the Carrots

  • Wash the pan, add more butter, and sauté the carrots. Season the carrots to taste and let them brown lightly. Remove the carrots from the pan and set aside.

Cook the Mushrooms and Peppers

  • Wash the pan again, add butter, and sauté the mushrooms until golden.
  • Repeat with the peppers; add a pinch of sugar to bring out their sweetness.

Boil the Soba Noodles

  • Boil the soba Noodles according to package instructions. Meanwhile, grate the ginger and lemon zest.

Cook the Meat

  • Heat a pan and cook the meat until it’s nicely browned. Add seasonings, grated ginger, and lemon zest, mixing well.

Assemble the Dish

  • Add all the vegetables to the pan with the meat and stir. Sauté everything together for a few minutes, then add a splash of water. Add a bit of butter, then the cooked soba noodles, mixing well to combine all ingredients evenly.

Finish

  • Finally, pour in the soy sauce and stir thoroughly. Sprinkle with sesame seeds (you can toast them slightly for a more intense flavor).
