Tender and juicy chicken thighs coated in a sweet and tangy honey mustard marinade, then baked until golden brown and crispy. This easy chicken dinner requires simple ingredients and is perfect for busy weeknights or family meals.
Preheat the oven to 400°F (200°C). Lightly grease a baking dish or line a baking sheet with parchment paper.
In a large bowl, combine the mustard, honey, vegetable oil, paprika, garlic powder, salt, black pepper, and rosemary. Mix until well combined.
Reserve about 2 tablespoons of the marinade in a small bowl for later.
Pat the chicken thighs dry with paper towels. Add them to the bowl and coat them evenly with the remaining marinade.
Arrange the chicken thighs skin-side up in the prepared baking dish, leaving a little space between each piece.
Bake for 25 minutes.
Remove the chicken from the oven and brush the tops with the reserved marinade.
Return the chicken to the oven and bake for another 15–20 minutes, or until the skin is golden brown and the internal temperature reaches 165°F (74°C).
Let the chicken rest for 5 minutes before serving.
Notes
Regular yellow mustard is recommended for a smooth marinade and balanced flavor.
Dijon mustard can be used, but it may create a thicker marinade, especially if it contains whole mustard seeds.
For extra crispy skin, pat the chicken completely dry before marinating.
