Ingredients
  

  • 2 chicken fillets boneless, skinless
  • 1 orange peeled, cut into chunks, optional zest
  • 2 red peppers roasted, peeled, sliced
  • 2 slices bread toasted and cubed
  • 80 g feta cheese or cream cheese, cut into chunks
  • 2 cups fresh greens valerian leaves or mixed salad greens
  • 2 tbsp balsamic glaze
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp dried onion flakes
  • Salt & black pepper to taste
  • Olive oil for cooking

Instructions
 

  • Cook the chicken – Season fillets with paprika, garlic powder, onion, salt, and pepper. Pan-sear in a little olive oil until golden and cooked through. Slice into bite-sized pieces.
  • Roast the peppers – Slice peppers into strips, season lightly, and roast or pan-fry until tender and slightly charred. Peel off the skin once cooled.
  • Toast the bread – Toast slices of bread until crisp, then cut into small cubes for croutons.
  • Prepare the orange – Peel and cut into chunks. Optionally zest some peel for extra flavor.
  • Assemble the salad – Layer fresh greens on a plate, then top with chicken, peppers, orange chunks, croutons, and feta.
  • Finish & serve – Drizzle with balsamic glaze and enjoy!
