Instructions
 

Prep and Skewer the Chicken

  • Begin by soaking wooden skewers in water for at least 30 minutes to prevent burning.
  • Mix the chicken seasoning ingredients in a small bowl and set aside. Cut the chicken into 3-inch pieces and place them in a large bowl or zip-top bag. Drizzle with olive oil and add the seasoning mixture, ensuring all pieces are evenly coated.
  • Thread the chicken onto the skewers, packing them tightly without gaps to maintain maximum juiciness. If necessary, trim the skewers' tips to fit into your oven after assembling.

Make the Garlic Parmesan Butter Sauce

  • Melt the butter partially in a microwave-safe bowl with the minced garlic. Add red pepper flakes, hot sauce, seasonings, and parmesan, then whisk until fully combined.
  • Tip: If the sauce separates, stir in 1–2 tablespoons of softened butter to re-emulsify.
  • Reserve 1/3 of the sauce for basting during cooking, and keep the rest for basting the cooked chicken. Ensure you use clean utensils to avoid cross-contamination.

Cook the Chicken

  • Preheat your oven to 400°F (200°C). Arrange the skewers on a baking sheet lined with parchment paper or a wire rack.
  • Bake the skewers for 10 minutes, then flip them and brush with the reserved sauce. Bake for another 5 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  • Once fully cooked, brush the skewers with the remaining clean sauce and sprinkle with extra parmesan before serving.
