Ingredients
  

  • 500 g chicken breast
  • 1 tbsp chicken seasoning
  • 2 tbsp fajita seasoning
  • 1 onion finely diced
  • 3 peppers finely diced
  • 3 tsp garlic purée or 3 cloves, minced
  • 300 g pasta uncooked weight
  • 400 ml hot chicken stock
  • 600 ml warm milk
  • 1 tsp mustard optional, e.g., English mustard
  • 120 g cheese mix of extra mature cheddar and mozzarella works well
  • Salt and pepper to taste
  • Parsley and chili flakes optional, for garnish

Instructions
 

Prepare the Chicken:

  • Season the chicken breast with the chicken seasoning and fajita seasoning. Heat a large pan over medium heat, add a drizzle of oil, and fry the chicken until fully cooked and browned. Remove the chicken from the pan and set it aside.

Cook the Vegetables:

  • In the same pan, add the diced onions and peppers and cook until softened. Add the garlic purée (or minced garlic) and cook for an additional minute, stirring frequently.

Cook the Pasta:

  • Add the uncooked pasta to the pan with the vegetables and stir well. Pour in the hot chicken stock and cook over high heat for a few minutes. Reduce the heat to medium, add the warm milk, and let the mixture simmer, stirring occasionally, until the pasta is cooked and the liquid has thickened into a creamy sauce.

Finish the Sauce:

  • Stir in the mustard (if using) and the cheese. Mix until the cheese has melted and the sauce is smooth. Season with salt and pepper to taste.

Combine and Serve:

  • Return the cooked chicken to the pan and stir to combine it with the creamy pasta and sauce. Garnish with parsley and chili flakes if desired, serve warm, and enjoy!
