Ingredients
  

  • 2 cups mixed salad greens
  • 1 small red onion thinly sliced
  • 2 medium cooked beetroot sliced or cubed
  • 1 can 150–180 g tuna, drained
  • 80 g feta cheese or bryndza / cream cheese, crumbled
  • 2 tbsp pumpkin seeds or toasted pine nuts

Citrus Dressing:

  • 1 tbsp olive oil
  • 1/2 –1 tsp honey
  • 1 tbsp mild mustard
  • 1 tbsp lemon juice
  • 1 tbsp grapefruit juice

Instructions
 

  • In a small bowl, prepare the dressing by mixing olive oil, honey, mustard, lemon juice, and grapefruit juice. Stir until smooth and set aside.
  • Add the salad greens to a large bowl. Top with thinly sliced red onion and sliced or cubed beetroot.
  • Add the drained tuna, breaking it gently into chunks.
  • Crumble the feta cheese over the salad.
  • Sprinkle pumpkin seeds or toasted pine nuts on top.
  • Pour the citrus dressing over the salad and toss gently to combine.
  • Serve immediately while fresh.

Notes

Use pre-cooked beetroot to save time, or roast it for a deeper flavor. Make sure to drain the tuna well to avoid a watery salad. You can adjust the dressing by adding more honey for sweetness or more lemon juice for extra freshness. For a dairy-free version, skip the feta or replace it with avocado. Best served fresh, but you can store it (without dressing) in the fridge for up to 1 day.
