Easy Asian-Style Chicken Breasts

Ingredients
  

Chicken

  • 2 chicken breasts
  • Salt and pepper to taste
  • 1 –2 tsp olive oil

Sauce

  • 2 –3 tbsp soy sauce
  • 1 tbsp sugar
  • 1 –2 tbsp lemon juice
  • 1 clove garlic crushed
  • Fresh ginger grated (to taste)

Vegetables

  • 1 red bell pepper sliced
  • 1 onion sliced
  • 150 –200 g mushrooms sliced
  • 1 tbsp butter
  • Extra green onions for topping

Instructions
 

Score and season the chicken

  • Lightly score the chicken breasts in a crisscross pattern. Season both sides with salt and pepper, then rub with a little olive oil.

Make the sauce

  • In a small bowl, mix soy sauce, sugar, lemon juice, crushed garlic, and grated ginger. Stir until the sugar dissolves.

Prep the vegetables

  • Slice the bell pepper, onion, and mushrooms into even pieces.

Cook the chicken

  • Heat a pan with a little oil and a small amount of butter. Add the chicken and cook on each side until golden and caramelized.

Add the sauce

  • Pour the prepared sauce over the chicken. Turn the chicken a few times to help it absorb the flavor. Remove chicken once cooked through.

Cook the vegetables

  • Add a fresh splash of soy sauce, a little sugar, lemon juice, and garlic to the pan. Add the sliced vegetables and sauté until tender.

Finish and serve

  • Top the vegetables with sliced green onions. Serve the chicken alongside the sautéed vegetables.
