Ingredients
  

  • 2 lbs Chicken Wings – Separated into drumettes and flats wing tips removed
  • ½ cup Parmesan Cheese – Finely grated
  • 3 tablespoons All-Purpose Flour
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Smoked Paprika
  • ½ teaspoon Salt – Adjust to taste
  • 1 tablespoon Baking Powder optional – For extra crispiness
  • 3 tablespoons Butter – Melted for the glaze
  • ¼ cup Fresh Orange Juice – About the juice of 1 orange
  • 2 tablespoons Fresh Lemon Juice – About the juice of 1 lemon
  • 2 tablespoons Fresh Parsley – Finely chopped plus extra for garnish

Instructions
 

Step 1: Prepare the Wings

  • If the wings are whole, start by cutting off the wing tips and separating the drumettes from the flats. Pat the wings dry with paper towels to remove excess moisture, which helps them get extra crispy. In a bowl, mix flour, garlic powder, paprika, salt, and baking powder (if using). Toss the wings in this mixture until evenly coated, then let them rest for 10 minutes to allow the coating to adhere.

Step 2: Cook the Wings

  • For baking, preheat the oven to 200°C (400°F) and arrange the wings on a lined baking tray in a single layer. Bake for 25-30 minutes, flipping halfway through, until crispy and golden brown. For frying, heat oil to 175°C (350°F) in a deep pan or fryer. Fry the wings in batches for 8-10 minutes until golden and crispy, then drain on a paper towel-lined plate.

Step 3: Make the Glaze

  • In a small saucepan over low heat, melt the butter. Stir in garlic powder (or minced garlic) and cook for about a minute until fragrant. Add fresh orange juice, lemon juice, and grated Parmesan, stirring until well combined. Let the sauce simmer for another minute before adding a pinch of salt and freshly chopped parsley.

Step 4: Toss & Serve

  • Transfer the crispy wings to a large bowl. Pour the warm Parmesan garlic butter glaze over them and gently toss to coat every piece. Garnish with extra Parmesan and parsley for a final touch, then serve hot and enjoy!
