Equipment

  • Mixing Bowl
  • Measuring Cups
  • Whisk
  • Grater
  • Frying pan
  • Spatula
  • Paper towels

Ingredients

  • 1 ½ cups corn fresh, canned, or frozen, drained if canned
  • 1 cup all-purpose flour
  • ½ cup mixed cheese grated
  • ? cup milk
  • 1 teaspoon baking powder
  • 2 large eggs
  • 1 tablespoon paprika paste
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons chives chopped
  • Salt & pepper to taste

Instructions

Step 1: Prepare the Batter

  • In a large mixing bowl, combine the corn, flour, grated mixed cheese, milk, baking powder, eggs, paprika paste, chopped parsley, chives, salt, and pepper. Stir well until all the ingredients are evenly mixed and a thick batter forms.

Step 2: Heat the Pan

  • Place a non-stick skillet or frying pan over medium heat and add a thin layer of oil. Let it heat up until it shimmers but doesn’t smoke.

Step 3: Cook the Fritters

  • Scoop about 2 tablespoons of batter for each fritter and carefully place it in the skillet. Gently flatten each one with the back of a spoon to help it cook evenly. Cook for 3-4 minutes on each side, or until they turn golden brown and crispy.

Step 4: Drain & Serve

  • Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb any excess oil. Serve them warm with your favorite dipping sauce, sour cream, or a squeeze of fresh lemon for extra flavor.
  • Enjoy these crispy, cheesy corn fritters as a snack, appetizer, or side dish!
