- 1 tortilla wrap
- 270 g chicken breast finely processed or ground
- ⅙ teaspoon salt
- 1/12 teaspoon black pepper a tiny pinch
For the Batter
- 1 egg
- 1 ⅓ tablespoons flour
- 35 ml water
- ⅔ teaspoon baking powder
- ⅙ teaspoon salt
- ⅙ teaspoon garlic powder
- ⅛ teaspoon black pepper
- Optional: a pinch of chili powder
- Optional: a pinch of chili flakes
For the Coating
- ⅔ cup panko or crushed cornflakes ≈ 130 ml
For Frying
- Oil enough to cover the base of your pan
Add the chicken to a food processor and blend until finely ground. Season with a pinch of salt and black pepper, then mix well.
In a bowl, whisk together the egg, flour, water, baking powder, salt, garlic powder, black pepper, and optional spices until the batter is smooth.
