Ingredients

Crispy Chicken Wings:

  • 500 g 1.1 lbs chicken wings
  • 1 tbsp aluminium-free baking powder must be baking powder, not baking soda
  • ¼ tsp salt regular table salt
  • ¼ tsp pepper
  • ¼ tsp garlic powder
  • ½ tsp paprika
  • 2 tbsp flour

Wing Sauce:

  • 75 ml ⅓ cup Frank’s hot sauce
  • 60 g ¼ cup unsalted butter
  • ½ tbsp cider vinegar
  • ½ tsp Worcestershire sauce
  • 1 clove garlic minced
  • ½ tbsp honey
  • tsp salt

Instructions

Prepare the Oven & Tray

  • Preheat the oven to 120°C (250°F, fan-assisted). Place a wire rack on top of a large baking tray to allow airflow for even crisping.

Prep the Chicken Wings

  • If using whole wings, separate them at the joint into drumettes and wingettes. Pat them dry thoroughly with paper towels to remove excess moisture.

Coat the Wings

  • In a large bowl, combine the wings with baking powder, salt, and pepper. Toss until they are evenly coated. Discard any excess coating.

First Bake

  • Arrange the wings in a single layer, skin side up, on the prepared rack. It’s okay if they touch slightly. Bake on the lower rack of the oven for 30 minutes.

Increase the Heat

  • After 30 minutes, increase the oven temperature to 220°C (425°F, fan-assisted). Rotate the tray and continue baking for 45-50 minutes until the wings turn golden brown and crispy. Remove from the oven and let them cool slightly.

Prepare the Sauce

  • While the wings are baking, make the sauce. In a small saucepan over medium-high heat, combine hot sauce, butter, cider vinegar, Worcestershire sauce, minced garlic, honey, and salt. Stir occasionally and bring to a gentle simmer. Once combined, turn off the heat and set aside.

Toss & Serve

  • These puff pastry burgers are a simple and interesting snack perfect for a festive table!
