Crispy Baked Chicken Tacos (Easy Ground Chicken Recipe)

Some meals just make you feel good the moment they come out of the oven. These crispy baked chicken tacos are warm, cheesy, and perfectly crunchy, with a simple filling that’s full of flavor.
The chicken cooks quickly in the pan, the vegetables soften and become fragrant, and everything is tucked into tortillas and baked until golden and crispy. When you pull the tray out of the oven and see that melted cheese and crunchy edges… it’s hard not to grab one right away.

Ingredients
  

For the Chicken

  • 1 lb ground chicken 450 g
  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • salt to taste
  • black pepper to taste

For the Vegetables

  • 1 small onion sliced
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 tbsp olive oil
  • salt to taste
  • black pepper to taste

For the Tacos

  • 8 –10 small flour tortillas
  • cups shredded cheese
  • ½ cup sweet corn
  • olive oil for brushing

Instructions
 

Cook the chicken

  • Heat 1 tablespoon olive oil in a large pan over medium heat. Add the ground chicken and break it apart with a spatula. Season with paprika, garlic powder, salt, and black pepper. Cook for about 7–8 minutes, stirring occasionally, until the chicken is fully cooked and lightly golden. Set aside.

Cook the vegetables

  • In the same pan, add 1 tablespoon olive oil. Add the sliced onion and bell peppers. Season with salt and black pepper and cook for about 5–6 minutes until the vegetables are softened and slightly caramelized.

Prepare the tacos

  • Preheat the oven to 425°F (220°C). Place the tortillas on a baking tray lined with parchment paper. On one half of each tortilla, sprinkle a little shredded cheese, add some cooked chicken, then top with the sautéed vegetables.

Assemble

  • Fold each tortilla over the filling to create a taco shape. Lightly brush the tops with olive oil, then sprinkle extra cheese and sweet corn over the tacos.

Bake

  • Bake for 10–12 minutes until the tortillas become crispy and the cheese is melted and golden.

Serve

  • Let the tacos cool slightly, then serve warm and enjoy.
