Ingredients
  

For the Tortilla Cones

  • - 6–8 small flour tortillas 6–8 inch size works best
  • - 1 tbsp olive oil for brushing

For the Chicken Filling

  • - 6 boneless skinless chicken thighs
  • - 1 lime juice only
  • - 1 tsp smoked paprika
  • - 1 tsp dried garlic
  • - 1 tsp dried onion
  • - 1 tsp lemon pepper
  • - ½ tsp salt or to taste
  • - 1 tbsp olive oil

For the Vegetable Mix

  • - 2 red bell peppers chopped
  • - 1 red onion chopped
  • - 1 jalapeño sliced
  • - 1 tbsp olive oil
  • - 1 tsp paprika
  • - 1 tsp dried garlic
  • - ½ tsp salt

For the Cheese

  • - 1 cup cheddar cheese grated
  • - 1 cup mozzarella or Mexican blend cheese grated

Optional Toppings

  • - Sour cream
  • - Guacamole
  • - Salsa
  • - Hot sauce

Instructions
 

Prepare the Chicken

  • Cut the chicken thighs into small, bite-sized pieces, squeeze lime juice over them, and season with smoked paprika, salt, dried garlic, dried onion, and lemon pepper, then drizzle with olive oil and mix well to coat evenly.

Prepare the Vegetables

  • Chop the red peppers, red onion, and jalapeños into small, uniform pieces, toss them with olive oil, salt, paprika, and dried garlic until evenly coated.

Grate the Cheese

  • Grate the cheese and cheddar cheese, then mix them together in a bowl to create the perfect cheesy blend.

Shape the Tortilla Cones

  • Cut the tortillas in half or into smaller pieces if they’re too large, roll each piece into a cone shape, and secure with a toothpick to hold them in place.

Cook the Chicken and Vegetables

  • Heat a skillet over medium heat, cook the seasoned chicken until fully cooked and golden brown, sauté the seasoned vegetables in a separate pan until tender and slightly caramelized, combine the cooked chicken and vegetables, then stir in half of the cheese mixture until melted and evenly distributed.

Fill the Cones and Bake

  • Preheat your oven to 180°C (350°F), fill each tortilla cone with the chicken and vegetable mixture, top with the remaining cheese, arrange the filled cones upright on a baking tray or muffin tin, and bake until the cheese is melted and bubbly, about 8 to 10 minutes.

Serve and Enjoy

  • Remove the toothpicks before serving and add optional toppings like sour cream, guacamole, or hot sauce to enjoy these handheld delights.
