Ingredients
  

  • 4 burger buns top and bottom
  • 4 eggs
  • 12 slices of bacon
  • 4 slices of cheddar cheese
  • 4 lettuce leaves
  • 8 slices of tomato
  • 8 slices of red onion
  • 1 pinch of chili flakes optional
  • Salt to taste
  • Black pepper to taste
  • 1 –2 teaspoons oil for cooking
  • 2 –3 tablespoons spicy burger sauce

Instructions
 

  • Cook the bacon in a pan over medium heat until crispy. Transfer to a paper towel to drain.
  • Toast the burger buns cut-side down in a dry pan until golden. Set aside.
  • Whisk the eggs with chili flakes (optional), salt, and pepper.
  • Lightly oil a non-stick pan and pour in the egg mixture.
  • Once the eggs begin to set, place both bun halves on top—cut sides facing the egg.
  • Let cook until the egg is mostly set underneath, then flip everything so the buns are on the bottom.
  • Fold the edges of the egg over the buns to wrap them.
  • Add a slice of cheese, then layer with lettuce, tomato, onion, bacon, and spicy burger sauce.
  • Close the buns gently into a sandwich and press lightly.
  • Let sit in the pan for 30 seconds so the cheese melts and everything warms through. Serve hot.
