Ingredients
  

For the zucchini base:

  • 1 large zucchini thinly sliced (about 2 mm thick)
  • 1 cup grated mozzarella cheese
  • 1 tablespoon extra virgin olive oil

For the filling:

  • 2 –3 tablespoons cream cheese plain or herbed
  • 1 handful fresh spinach leaves
  • 1 medium tomato sliced
  • 4 –6 slices prosciutto or cooked bacon optional

Instructions
 

Slice the zucchini

  • Cut the zucchini into thin, even slices (about 2 mm thick). These will serve as the “bread” for your sandwich, so try to keep the thickness consistent.

Arrange and prep for baking

  • On a baking tray lined with parchment paper, arrange the zucchini slices in two rectangle-shaped portions—these will become the top and bottom of your sandwich.

Top with mozzarella

  • Generously sprinkle grated mozzarella over both zucchini rectangles. Make sure it’s evenly spread to create a golden, cheesy crust.

Bake

  • Bake in a preheated oven at 180°C (350°F) for about 15 minutes, or until the mozzarella is bubbly and golden brown. Remove and let cool slightly.

Add the filling

  • Once cooled slightly, spread cream cheese over one side of each baked zucchini base.

Layer with spinach

  • Add a layer of fresh spinach on top of the cream cheese. You can press it down gently to keep the sandwich compact.

Add tomatoes

  • Place sliced tomatoes on top of the spinach layer. This adds moisture, freshness, and color.

Optional: Add bacon or prosciutto

  • For a protein-rich twist, layer on cooked bacon or slices of prosciutto. This step is optional and can be skipped for a vegetarian version.

Flip and serve

  • Carefully flip one zucchini base over the other to form a sandwich. Slice, serve, and enjoy warm or chilled!
