  • Start by scoring the salmon fillet with shallow diagonal cuts. Season the salmon evenly with salt and freshly ground black pepper, then brush or rub it generously with olive oil on both sides. Preheat the oven to 180°C (356°F), place the salmon on a lined baking tray, and bake for 15 minutes.

Making the Avocado Cream:

  • While the salmon is baking, halve and pit two ripe avocados, then scoop the flesh into a mixing bowl. Add cream (or a creamy alternative like sour cream), a pinch of salt, and freshly ground black pepper. Squeeze fresh lemon juice over the avocado mixture to enhance the flavor and prevent oxidation. Mash or blend the mixture until smooth and creamy.

Assembling the Dish:

  • Finely chop the pistachios using a sharp knife or a food processor. Once the salmon is done, remove it from the oven and transfer it to a serving platter.
