  • 1 tablespoon tomato paste

  • 3 –4 small to medium potatoes boiled and cooled
  • 1 –2 tablespoons melted butter
  • Garlic powder to taste
  • Smoked paprika to taste
  • Pepper to taste
  • Salt to taste

Optional for Serving

  • Fresh cherry tomatoes
  • Extra rosemary sprigs for garnish

How to Make It

  • This recipe might look fancy, but I promise it’s super simple to put together. With just a bit of prep and one baking tray, you’ll have a flavorful, cozy dinner ready in no time. Here’s exactly how I make this crispy bacon-wrapped trout with golden potatoes — step by step.

Step 1: Prep the Ingredients

  • Start by crinkle-cutting the boiled and cooled potatoes using a wavy slicer. Slice the onion into thin rings, then cut the lemon into thin rounds. Take the cleaned trout and season it well with salt and pepper, both inside and out.

Step 2: Stuff & Wrap the Trout

  • Gently open each trout and place a few slices of onion, lemon, and fresh herbs like rosemary or parsley inside. Carefully wrap each stuffed trout with bacon slices, making sure they’re covered from head to tail.

Step 3: Season the Potatoes, Assemble and Bake

  • Place the crinkle-cut potatoes in a bowl and sprinkle them with your favorite spices, garlic powder, smoked paprika, or anything you enjoy. Pour the melted butter over them and mix until evenly coated. Place the bacon-wrapped trout on a lined baking tray, brush the tops with a bit of tomato paste, then arrange the seasoned potatoes around the fish.
