- ¼ red cabbage finely chopped
- 2 carrots finely chopped
- 1 red bell pepper finely chopped
- 1 small red onion finely chopped
- ½ cup cooked corn
- 1 cup pomegranate seeds
- 2 tablespoons fresh parsley chopped
For the Dressing
- ¼ cup olive oil
- Juice of 1 small lemon
- 1 teaspoon salt
- 1 garlic clove crushed (optional)
Finely chop the red cabbage, carrots, red bell pepper, and red onion. Place them in a large bowl.
Add the cooked corn, pomegranate seeds, and chopped parsley to the bowl.
In a separate small bowl, whisk together the olive oil, lemon juice, salt and garlic if using.
Pour the dressing over the vegetables.
Mix well until everything is evenly coated.
Let the salad rest for 15–20 minutes so the flavors can blend.
Serve fresh and enjoy.
