Ingredients
  

  • 1 - 2 medium red potatoes thinly sliced
  • 2 boneless chicken thighs cut into bite-size pieces
  • 8 –10 mini mozzarella balls used whole
  • 2 - 3 large eggs
  • 2 tablespoons fresh parsley finely chopped
  • 1 tablespoon olive oil for greasing the dish
  • Salt to taste
  • Black pepper to taste
  • Fresh basil for garnish (optional)

Instructions
 

Prepare the ingredients

  • Cut the boneless chicken thighs into bite-size pieces. Season with salt, black pepper, and your preferred spices. Peel the potatoes and slice them very thinly.

Make the potato base

  • Lightly grease a heatproof glass baking dish with olive oil. Arrange the potato slices in an even, slightly overlapping layer. Season lightly with salt.

Pre-cook the potatoes

  • Place the dish in the air fryer basket and air fry at 180°C / 360°F for 10 minutes, until the potatoes start to soften.

Prepare the egg mixture

  • In a bowl, beat the eggs with chopped parsley, salt, and black pepper until well combined.

Assemble the quiche

  • Remove the dish from the air fryer. Spread the seasoned chicken evenly over the potato base. Place the mozzarella balls whole on top of the chicken.

Add the eggs

  • Pour the egg and parsley mixture evenly over the chicken and mozzarella, making sure it spreads throughout the dish.

Air fry

  • Return the dish to the air fryer and cook at 185–190°C / 365–375°F for 15–20 minutes, until the quiche is fully set, golden on top, and the mozzarella is melted.

Rest and serve

  • Let the quiche rest for 5 minutes before slicing. Garnish with fresh basil if desired and serve warm.
